Quick Yummy Meal - Catalina Cranberry Chicken


I found this recipe on Kraft Foods web site.  I made it as instructed and it was yummy.  Then the next time I made it, I forgot an ingredient.  It was still yummy and in the opinion of my family, better than the other way.  So here is the recipe...

Ingredients
4 lb. chicken pieces (breast halves and/or thighs - bone-in or boneless)
1 can (16 oz.) whole berry cranberry sauce
1 bottle (8 oz.) KRAFT CATALINA Dressing

Directions
HEAT oven to 350°F.
PLACE chicken in 13x9-inch baking dish.
MIX remaining ingredients (cranberry sauce and dressing); pour over chicken.
BAKE 50 min. or until chicken is done (165°F).

We have served it with a variety of side dishes but I think I like placing it on a bed of rice the best...because the rice soaks up the sauce and turns yummy too! Enjoy!

Quick Yummy Meal

As a mom who works outside the home, I'm always looking for something quick and yummy to make for dinner. I thought since I often search the web for such recipes, I should share the best ones I find here!

Sausage Rigatoni

INGREDIENTS

1 lb Italian Sausage (I use Jennie-O's Italian Turkey Sausage)
1 6 oz can of tomato paste
1/2 bottle (about 8 oz) of Sun dried Tomato Vinaigrette (I use Kraft's version)
1 box of Rigatoni, Parmesan Cheese

DIRECTIONS

Start water for rigatoni.  Add noodles when water reaches a boil and cook to desired softness

Brown sausage in small skillet. Drain fat.

Add tomato paste and dressing to sausage and mix thoroughly. Heat on low for 10 minutes.

Drain noodles and add sausage mixture. Stir to coat noodles.

Serve and top with Parmesan cheese. We like to serve Caesar salad and garlic bread with this meal. Great alternative to spaghetti! This is my kids' favorite meal.

Fabulous little website that is totally free and helps you track you fitness goals, whatever they may be. You have to try it. I went on because my hubby was using it and I am a freak when it comes to fat content. I'm always worried that I'm getting too much fat. My father's family blessed me with a great metabolism (for now) so calories don't concern me as much but every time I see bacon or mayo or sweets I envision how it is clogging my arteries with every bite. This lets you load in everything you eat (and actually has a database that contains most of the things I eat or use in recipes so it is super easy) and see what your daily totals are and what you should be getting. LOVE IT! I've been shocked to see the nutritional information on some of the stuff I eat. SHOCKED!

Quick Yummy Meals
One of my Facebook friends asked for dinner suggestions and someone put this. I had to try it and YUM-O. Quick, easy and good.

Enchilada Skillet

You need 1 pound of hamburger, 1 small jar of salsa, 1 can of enchilada sauce and 10 corn tortillas.

Brown your ground beef and drain. Cut your tortillas into 1 inch squares. Add the tortilla squares, salsa and the enchilada sauce to your meat. Cook 5 to 10 minutes or until the liquid has cooked down.


Serve with regular taco toppings like shredded cheese, sour cream, guacamole/avacado, olives, etc.

Yum, Yum, Yum.
